On the Tuesday before Thanksgiving, RSENR Student Services staff volunteered with the Committee on Temporary Shelter (COTS) in Burlington to prepare and serve a lunchtime meal. They met bright and early to start cooking and put together a healthy, hearty, and delicious menu to serve up to 50 individuals who come to the COTS Daystation for lunch each day.

The menu featured: potato leek soup with vegetables straight from the garden, roasted root vegetables, homemade buttermilk biscuits and wheat bread, and cookies and cheesecake bars for dessert.

COTS provides services for people who are homeless or marginally housed in Vermont, and its Daystation in Burlington is a place where people in need can find support and services toward their goal of self-sufficiency.  Lunch is served 365 days a year at the COTS Daystation, which is the only daytime shelter for homeless adults in Chittenden County. 

The Student Services staff had a wonderful time cooking together and spending time with the COTS staff and those individuals who benefit from their services!
