City Market and The Intervale Center, with support from ArtsRiot, have teamed up to create The Dish: an exploratory series of panel discussions that dive into hot food issues with the help of local experts. Check out the full schedule.
The first discussion in this year's series is on Vermont Culinary Traditions. Vermont is nationally known for its strong food and farm heritage, dating back thousands of years. In this Dish discussion, we’ll explore the ways that our production of dairy products, maple syrup, and fruits and vegetables are similar to earlier times, as well as some recent innovations that are quite different. We’ll dive into Vermont’s culinary traditions to learn about the way people cooked and ate over the centuries, from indigenous Abenaki to European settlers. We’ll also learn what Vermonters are doing today to keep that culinary history alive, and how they are forging new traditions. Panelists are: Anne-Marie Lefebvre - Seeds of Renewal, Dr. Amy Trubek - UVM, Nutrition and Food Science, Dr. John Crock - UVM, Anthropology's Consulting Archaeology Program, and Chief Don Stevens - Nulhegan Abenaki Tribe. The discussion will be moderated by Suzanne Podhaizer, journalist and food writer for Seven Days.
