Invasive Species Dinner
- By Jae Baker
Many invasive species that are out-competing native species and changing ecosystems are edible and chef Eric Caravan is preparing a tasty way to help fight these invasive species: Do your part and Eat them!
Inspired by the work of UVM Professor Joe Roman and his Eat the Invaders project, this meal will tickle your tastebuds with innovative dishes featuring invasive species like green crab, wild boar, periwinkles, white perch, watercress, sow thistle, and lamb's quarters.
October 24, 2017 - FREE to students with unlimited meal plan (otherwise it’s $11.) Open to the public. Dinner will start at 4:30pm until 8:00pm at Harris Millis Dining Hall.
