I've always loved cooking. My husband and I used to whip up a batch of gumbo and some muffalletta sandwiches and head off to concerts with a stack of bowls, spoons and napkins. I figured it was a great way to pay for the show. It became so popular that I started Karen's Food Company in 1996 as a home catering business. Life was great! I was able to cook, earn some money and be at home to raise our daughter. Then one of my faithful customers suggested I try selling my muffalletta condiment at a local Farmer's Market. Life as I knew it was about to change. With a tremendous amount of support and good old fashioned hard work, we've grown. I still pride myself in quality, and continue to produce our products in small hand-worked batches. I choose only the finest ingredients, from the best companies in Vermont. Enjoy!
Products:
1. Olive & Garlic Muffalletta- A New Orleans slather designed for the one and only Muffalletta Sandwich. This condiment of olives, garlic, olive oil and herbs creates a decadent sandwich when combined with French bread, turkey, Vermont cheddar cheese and tomatoes, or the traditional provolone, salami and ham. We frequently use it as a tapanade served with a tray of cheese, crackers, French bread and, of course, grapes. Also, try it tossed with fresh pasta, cheese and diced plum tomatoes!
2. Hot Giardiniera- This jazzy Italian condiment is an old favorite. It finds its way to our table for all kinds of meals including pasta, pizza, Italian sausages, sandwiches and even omelets. It combines olives, peppers, carrots, celery, herbs and olive oil. This is not, however, for the meek. We believe if the label says "HOT," it really ought to be.
3. Fresh Tomato & Olive Bruchetta- This distinctly Tuscan product combines fresh plum tomatoes, olives, roasted garlic, caramelized onions, herbs and Balsamic vinegar in a pungent chutney-style condiment. It makes an excellent base for gourmet pizza, or a tasty tapanade for chicken, veal, beef, or pork. We frequently serve it on pasta for an easy elegant dish or j ust enjoy it straight with a loaf of crusty French bread.
