About NFS 203 Z1

Desirable and undesirable activities of bacteria in foods. Mechanisms of food-borne infection and intoxication. Laboratory methods to enumerate and identify microorganisms associated with food. Prerequisite: NFS 153 or Instructor permission. Co-requisite: NFS 213.

Section Description

This course includes an examination of techniques utilized in analyzing food samples for microbial content, discussion of the major food borne illness related microbes as well as a discussion of the positive use of microbes during the production of fermented foods.

Section Expectation

Students are expect to come to class every day and to participate in the discussions. While prior understanding of food processing and/or microbiology is desired, it is not required.

Evaluation

Students will be evaluated on attendance/participation as well as three exams throughout the course. In class exams will be multiple choice questions with a few short answer questions. Take home portion of exams will require 2 to 3 page essay answers.
