"Shrink" is the loss of usable product after initial production has been completed and measured (or forecasted). Shrink includes losses due to: spoilage, quality issues, spills, residue lost (filters, hoses, container transfer), unaccounted gifts, and other reductions in the final amount of salable syrup. A shrink rate range of 2-10% is typical and may be higher in certain circumstances.

NOTE: a 40 gallon syrup drum = 445 pounds
