R. Chris Skinner is the research and outreach manager for the UVM side of the Food Systems Research Center. Chris's role with the center is to work to support research activities and ensure the FSRC work is reaching a wide audience. Chris works closely with Dean Parise and Dr. Niles to further the mission and vision of the FSRC. His research background is in repurposing food waste for the creation of value-added food products, as well as in investigating mechanisms of liver and metabolic diseases. He is interested in these topics, as well as addressing health inequities and improving scientific communication.
Chris has a PhD in nutrition and a MS in exercise physiology from West Virginia University, as well as a BS in exercise science from West Virginia Wesleyan College. Prior to joining UVM, Chris was an Assistant Professor at a small liberal arts college in Arkansas and maintains an active interest in teaching, serving as an adjunct at UVM, Saint Michael's College, and WVU.
