The study of standard guidelines to select foods that maximize human health and the functions of the essential nutrients needed to sustain human life. Prerequisites: High school chemistry and biology.

Gain an appreciation for the connection between diet and health while learning the principles of human nutrition. Discover what controls your appetite, understand the workings of the digestive system and explore the impact of alcohol on your body. The focus is primarily on the nutrients and their role in the body and what happens when there is too little or too much of these nutrients. Develop a better understanding of contemporary nutritional and health issues. By the end of the course, you will be better equipped to make informed decisions regarding your diet and be better able to distinguish between scientific information and nutritional hype that abounds in the media. (This is an introductory course, but is quite comprehensive and includes much scientific material).
