VEGETARIAN MUSHROOM BURGERS

1 large onion, finely diced
2 cloves garlic, crushed
250g flat or brown mushrooms
1 1/2 cups wholegrain breadcrumbs
1 Tbsp lemon juice
2 Tbsp chopped parsley
1 tsp chopped sage or thyme
1 tsp soy sauce
3 - 4 Tbsp polenta

Saute the onion and garlic in oil until the onion is soft.  Add the
mushrooms and cook until soft and all the liquid has evaporated.  Add
the breadcrumbs, lemon juice, herbs and soy sauce.  Divide into
four portions and mould into patties.  Dust with polenta.  Barbecue
over medium heat for about 3 - 4 minutes each side.
Or cook either in a little oil in a frying pan, or under a grill.

VEGGIE BURGERS

3 cup brown rice, cooked
1 cup celery, finely chopped
1 cup onion, finely chopped
2 cup sliced, sauteed mushrooms
2 cup grated carrots
3 eggs, beaten
2 tsp. garlic powder
1/2 cup whole wheat flour
1/2 cup oat bran

Combine rice, celery, onion, mushrooms and carrots. Add
eggs, garlic powder, whole wheat flour and oat bran, gradually.
Shape and fry in low cholesterol oil in hot frying pan. It may
be necessary to dredge burgers in whole wheat flour, if they
are soggy. Season with more garlic powder, if desired. Serve
on a whole wheat bun with a slice of melted cheese.
Variations: Grated cheese may be added to the mixture
before frying the burgers. Extra burgers may be frozen for
later use.
