Low-Fat Greens With A Bite

Great with or without the added "sour cream."

1/4 cup vegetable broth
1 teaspoon olive oil
2 cloves of garlic
1/4 cup chopped onion
1 Tablespoon prepared mustard
2 Tablespoons prepared horseradish
6 cups shredded greens (collard, kale, mustard, etc.)
1/4 cup low-fat  "sour cream" (optional)

Briefly saute garlic and onion over low heat in broth and olive oil. Stir in
mustard, horseradish, and raw shredded greens. Cover and cook over low heat
until wilted. Stir occasionally to prevent burning. Makes a great
accompaniment for vegetables burgers or cooked beans.
Makes 4 servings.
