Tomato Garlic Pasta Salad

16 oz penne pasta
4 cups tomatoes, peeled and diced
2 tsp basil
2 bay leaves
3 Tbsp olive oil
8 cloves garlic
1 cup onion, chopped
2 tsp oregano
4 Tbsp parsley
1/2 tsp pepper
2 tsp salt

Cook pasta until done; drain. Transfer pasta to serving bowl and toss with
1 Tbsp olive oil. Saute onions and garlic in 2 Tbsp oil until onions
become translucent. Add tomatoes, basil, bay leaves, oregano, pepper and
salt to onions and garlic. Cover and simmer 10 minutes. remove bay leaves
and add parsley. Cool tomato mixture to room temperature. Pour tomato
mixture over the pasta and toss until well blended. 

Serves 8.

PER SERVING:  Calories- 289; total fat- 6.4gm; saturated fat- 0.9gm;
cholesterol- 0mg; %calories from fat- 20%.
