Tagliolini with Tiny Squid and Rocket

30g (1 oz) butter
15 ml (1 Tbsp) extra virgin olive oil
1 clove garlic, minced
1 red chili pepper
300g (9.5 oz) wild rocket, washed and dried
600g (1 lb 4 oz) very small squid whole and cleaned
salt
pepper
600g (1 lb 3.5 oz) tagliolini

Heat the butter and oil and add the minced garlic and whole chili.  As the
garlic begins to change colour add the rocket leaves and let them wilt
very quickly over high heat.  Then stir in the squid, lower the heat and
remove the chili.  Season to taste.  Cook the pasta in boiling salted
water, drain and stir quickly into the squid and rocket.

Serve immediately
