Tabbouleh

140 g / 5 oz Couscous
8 Tbsp Finely Chopped Fresh Parsley
3 Tbsp Finely Chopped Fresh Mint
3 Tomatoes, Skinned, Seeded & Finely Chopped
1/4 Cucumber, peeled and Finely Diced
1/2 Onion, Red, Finley Chopped
Juice 1/2 Lemon and 1/2 Lime (or 1 Lemon)
3 Tbsp Olive Oil
200 ml Boiling Water

Pour Boiling water over couscous, leave for 15-20 minutes, stirring once or 
twice, until all the water has been absorbed. Mix all other ingredients 
together, then add the couscous and gently mix. taste and Season, cover and 
chill overnight. Next day, stir and taste again and season if necessary. Serve 
at room temperature.  Serves about 6 as an accompaniment.
