Sweet Potato and Apricot Casserole

1 pound can of sweet potatoes or yams

OR

4 medium sweet potatoes or yams, cooked and peeled
3 Tbsp undiluted frozen orange juice concentrate
3 Tbsp butter, melted
1 Tbsp brown sugar
pinch of salt
pinch of nutmeg
2 eggs
1/2 cup dried apricots, chopped


Mash potatoes. Mix with the juice and butter, sugar and all the 
seasonings. Stir in unbeaten eggs and the apricots. Spoon into a well 
buttered casserole baking dish. Bake at 350* for 20 - 25 minutes.
