 Split Pea Soup

1 Tbsp olive oil 
2 medium onions, chopped
2 carrots, sliced       
1 celery rib, choppped 
1 medium potato, chopped  
2 cups split peas
poultry seasoning.
salt,  pepper to taste
lime juice  or cider vinegar
6 cups water

Heat olive oil in soup kettle. Add vegetables and saute. Add
split peas,water and seasonings.. Cook until peas are soft-about
3o minutes. Puree. Serve with lime juice or cider vinegar.
