Kartoffelpfannkuchen
Potato Pancakes

4 1/2 lbs Potatoes
2 med Onions
2 1/2 tsp Salt
4 Eggs
2 oz Flour
1/4 cup Oil for frying

Peel potatoes and onions, and grate (easy in food processor). To potatoes and
onions add salt, eggs, and flour, mix well. In frying pan heat oil. Drop the
pancake mixture by heaping tablespoon full into pan, flattening out some. Brown
on both sides until crisp.

Note: Use splash guard around pan.
