Potato Pancakes


6 raw medium potatoes grated
1 raw medium onion grated
2 eggs
1/2 tsp. salt
pepper
4 Tbsp flour
1 tsp. parsley
2 Tbsp oil

Peel and grate the potatoes. Drain the liquid. Mix the potatoes with eggs, 
grated onion, salt, parsley, and pepper. Heat the oil in a skillet and then put 
the dough in, 3 tablespoons at a time. Spread the dough out evenly. Bake on both
sides until golden brown.
A good way to serve them is with applesauce (the most common way they
are eaten in Germany).
