Potato Pancakes with Spicy Peanut Sauce

For Pancakes:                     
2 Onions, dices                   
2 cloves garlic, minced           
2 tsp Olive oil                   
1/4 tsp paprika                   
1 LB crumbled firm tofu           
3 baking potatoes                 
1/2 tsp salt
pepper to taste

 For sauce:
1 Onion, minced
2 cloves garlic minced
3 canned tomatoes and juice
2 Tbsp peanut butter
1/4 tsp paprika
1/4 tsp cayenne

For potatoes: Bake potatoes and mash. Saute onion, garlic, and paprika on
low heat until soft, 20 minutes in non-stick pan. In a bowl, mix cooked
onion mixture, tofu, mashed potatoes, salt and pepper. Shape into 1/2 inch
thick patties and fry over high heat in non-stick pan until browned. 
Serve topped with sauce. 

For sauce: cook onions, garlic, paprika, tomatoes and juice from can for
20-30 minutes. combine peanut butter with hot water and add. spoon over
pancakes.
