      Title: Carl Weathers' Penne a la Vodka

      Yield: 1 servings

      2 Tbsp Butter
      2 Tbsp Olive oil
      1 md Onion; chop
      4 cl Garlic; mince
     24    Mushrooms; slice
      2    Bn            basil; chop
     20    Roma tomatoes; peel, seed; c
           -hop
    1/4 cup  Vodka
    1/8 tsp Crushed red pepper flakes
    1/3 cup  Heavy cream
     16 oz Penne; cook
           Salt and pepper
           Parmesan
           Basil; garnish

Put oil and butter in pan and saute onions, garlic and mushrooms for 5
minutes. Add tomatoes, basil, vodka, pepper flakes, salt and pepper.
Simmer for 15 to 20 minutes. Stir in cream. Put in processor and
pulse until creamy. Serve over penne with Parmesan cheese.

      Title: Penne a'La Vodka
 Categories: Pasta, Pork & ham
      Yield: 1 servings

     28 oz -cn crushed tomatoes
      1 cl Garlic, chopped
      4    Sl prosciutto
    1/2    St butter
    1/2 cup  Heavy cream
    1/4 cup  Vodka
    1/2 tsp Hot pepper flakes
      1 dash Salt
      1    Penne or rigatoni

Cut prosciutto or bacon into small pieces. Melt
butter and saute prosciutto and garlic until lightly browned. Add
tomatoes, pepper flakes and salt and cook for 1 hour stirring
occasionally. Keep partially covered so that the sauce can reduce.
When sauce has reduced to about half, add heavy cream and vodka,
bring to a boil, stirring constantly. Simmer for 1/2 hour and serve
over Penne, Rigatoni, or other "shaped" pasta.

NOTE: If sauce becomes too thick, add either more cream or some water.

      Yield: 1 servings

    1/4 lb Prosciutto ham; chopped
      1 lb Penne pasta
      1    28 oz. can chopped tomatoes
      1 Tbsp Olive oil
      1 tsp Chopped garlic
      1 Tbsp Parsley flakes
      1 Tbsp Crushed bay leaves
      1 tsp Crushed red pepper
    1/4 cup  Vodka
      1 cup  Heavy cream
    1/2 cup  Parmesan cheese

Saute garlic in olive oil.  Add crushed tomatoes, prosciutto,
parsley, bay leaves, red pepper, vodka and simmer for about 10
minutes in medium heat.
Cook penne and drain.
Add heavy cream to sauce and cook for 2 minutes in low heat.
Mix penne in sauce and add Parmesan cheese.
Mix again.  Serve with garlic bread.

      Yield: 4 Servings

     12 oz Penne pasta
      2 Tbsp Olive oil
      1    Shallot; thinly sliced
      4    Roma tomatoes; seeded and ch
           -opped
    2/3 cup  Whipping cream
      1 pn Ground nutmeg
      2 Tbsp Fresh dill; chopped
           or
    1/2 tsp Dried dill weed
    1/3 cup  Vodka
      6 oz Smoked salmon; cut into
           -strips
           White pepper
      1    Fresh dill

Cook pasta and drain well. Heat oil in a wide frying pan over
medium-low heat.  Add shallot and cook, Add pasta to sauce and mix
lightly using 2 spoons, until pasta is well coat Season to taste with
white pepper and garnish with dill springs.
