   3      cloves        Garlic -- coarsely chopped
   1      small         onion -- chopped
     1/2  cup           Vodka
  28      ounces        tomatoes -- crushed
     1/2  teaspoon      Hot pepper flakes
   1      cup           Heavy cream
                        Olive oil
                        Salt & pepper -- to taste

The key to making this sauce great as opposed to good is the cooking of 
the garlic.  Heat a little olive oil in a large frying pan large enough to 
accept all 
the ingredients.  Add garlic.  Cook until it is golden brown. Add hot 
pepper flakes and saute with the garlic.  Cook until garlic it turns 
DARK brown in color.  Add onion and cook three minutes.
Add Vodka and reduce liquid by 1/2.  Add tomato and cream. 
Reduce until desired consistency is reached.  Check for salt and pepper.
 This sauce is best served with penne shaped pasta and a good shot of 
parmagiana or Romano cheese.

  16      ounces        Dry penne pasta
   1      whole         onion -- chopped
   2      tablespoons   Butter
   2      tablespoons   Olive oil
  28      ounces        Italian plum tomatoes -- pureed
   8      ounces        Heavy whipping cream
   4      ounces        Hot Pepper Vodka
                        Parmesan cheese -- to taste

Saute onion in butter & olive oil until transparent.
Add tomatoes with juice, cook over medium heat 20-25 minutes.
Meanwhile, cook pasta according to pkg directions and set aside.
When tomato sauce is ready, add cream and bring to near boil.
Cook 2-3 minutes or until tomatoes and cream are blended.
Stir in vodka, mix, and stir in hot pasta.  Serve with grated cheese.

                    PENNE ALA VODKA AND SMOKED SALMON

  12      ounces        penne pasta
   2      tablespoons   olive oil
   1      whole         shallot -- thinly sliced
   4      whole         Roma tomatoes -- seeded and chopped
     2/3  cup           whipping cream
          pinch         ground nutmeg
   2      tablespoons   fresh dill -- chopped
                        ***OR***
     1/2  teaspoon      dried dill weed
     1/3  cup           vodka
   6      ounces        smoked salmon -- cut into strips
                        white pepper
          sprig         fresh dill

Cook pasta and drain well. 

Heat oil in a wide frying pan over medium-low heat.  Add shallot and 
cook, stirring often, until soft but not brown (about 3 minutes).  Stir 
in chopped tomatoes, cover and simmer for 5 minutes.  Add cream, nutmeg, 
chopped dill and vodka.  Increase heat to high and bring to a full boil.  
Boil for 1 minute.
Add pasta to sauce and mix lightly using 2 spoons, until pasta is well 
coated.  Remove from heat, add salmon and mix lightly.
Season to taste with white pepper and garnish with dill springs.

     1/2  pound         Penne
   1      cup           Vodka
   1      teaspoon      Hot red pepper flakes
   6      tablespoons   Unsalted butter -- cubed
   1      cup           Heavy cream
   3      tablespoons   Grated Parmesan cheese
                        Salt and pepper -- to taste
                        orange zest

Drop the penne in a pot of boiling water and cook until al dente, then drain.
While the penne is cooking, heat the vodka, red pepper flakes, and
butter in a large saucepan over low heat until the butter is melted,
then simmer for 2 minutes. Stir in the cream, salt and pepper and bring 
to a boil. Return heat to low and simmer for 7 minutes, stirring often, 
until slightly thickened. 
Stir in the drained pasta and cook for another 3 minutes. Stir in the 
Parmesan and mix well.  Sprinkle about a teaspoon of orange rind onto 
each serving

  28      oz            Crushed tomatoes
   1      clove         Garlic -- chopped
   4      slices        Prosciutto -- 1/4" thick
     1/2  stick         Butter
     1/2  cup           Heavy cream
     1/2  cup           Vodka
     1/2  teaspoon      Hot pepper flakes
          Dash          Salt
  16      ounces        Penne or Rigatoni

Cut prosciutto or bacon into small pieces.  Melt butter and saute
prosciutto and garlic until lightly browned.  Add tomatoes, pepper
flakes and salt and cook for 1 hour stirring occasionally.  Keep
partially covered so that the sauce can reduce. 
When sauce has reduced to about half, add heavy cream and vodka, bring to 
a boil, stirring constantly.  Simmer for 1/2 hour and serve over Penne, 
Rigatoni, or other "shaped" pasta.

     1/4  cup           Onion -- chopped
     1/4  cup           prosciutto -- chopped
     1/2  cup           Vodka
     1/2  cup           Heavy cream
   1      tablespoon    fresh parsley -- chopped
     1/2  teaspoon      Pepper
  16      ounces        Penne or mostaccioli
   2      tablespoons   Fresh grated Parmesan cheese

Heat butter and oil in 10-inch skillet over medium-high heat.  Saute
garlic and onion in butter mixture.  Stir in prosciutto and cook,
stirring occasionally, for a few minutes.  
Stir in vodka. Heat over high heat until hot.  Carefully ignite.  Stir in 
whipping cream, parsley and pepper when flame dies out.  (To extinguish 
flame easily, cover with lid.)  Heat to boiling.  Reduce heat.  Simmer, 
uncovered, 30 minutes, stirring   frequently, until thickened.  
Cook penne as directed on package. Mix together penne and cream mixture 
and top with cheese
