Low-Fat Pasta with Spinach Sauce

2 cups elbow macaroni, dry
2 cups fresh spinach, packed
1/2 cup parsley flakes
2 garlic cloves
dash of white pepper
2 Tablespoons lemon juice
3 Tablespoons fat free butter

In medium saucepan, cook macaroni according to package directions, drain
and set aside.
Meanwhile, in food processor, combine spinach, parsley, garlic, pepper,
and lemon juice. Chop for 2 minutes; spinach should be finely chopped. Add
butter and mix until sauce is smooth. Scrape sides occasionally.
Toss spinach sauce with hot pasta and serve.
Makes 8 servings.
Calories  131  Fat  0.8 g  Fiber  1.5 g.
