PAGLIA e FIENO     [Straw and Hay] 

3 oz green noodles
3 oz white noodles
1 C whipping cream
2 T butter
1/4 C ham cut in julienne strips
1/4 C peas [cooked]
1/4 C grated parmesan cheese
2 well-beaten  eggs

Cook noodles in boiling salted water about 5 minutes; drain.  Meanwhile in
large saucepan, combine cream, butter, ham and peas; heat till butter is
melted.  Stir in noodles.  Cook about 5 minutes, till noodles are tender.
Stir in cheese and egg yolks.  Cook and stir until thickened slightly.
    
Serves 4
