This is my favorite meatloaf recipe and I always get raves:

Meatloaf

2 lbs. ground beef
3 eggs
1-1/2 cups redi-flavored bread crumbs
1 small onion - minced very fine
1/4 cup ketchup
1/4 cup milk
black pepper to taste
few splashes of hot sauce

Preheat oven to 350. Mix all ingredients (use your hands) and put into a loaf
pan that's been sprayed with non-stick spray. Bake for about an hour and 15
minutes. Let sit for 10 minutes before slicing. 

Serve with mashed potatoes!! :)

Meat Loaf

1 lb. lean ground meat
2/3 cup evaporated milk
2 Tbsp. Worcestershire sauce
1/3 cup bread crumbs
1/4 cup catsup

more catsup
onions peeled  
new potatoes
carrots peeled and cut into serving size

Mix meat, evaporated milk,Worcestershire sauce, bread crumbs and catsup 
together, shape into loaf, place in roasting pan, put a little catsup over top 
of meat, surround with peeled onions, new potatoes and carrots peeled and cut 
into serving size, sprinkle with some parsley, salt and pepper and cover with 
aluminum foil, bake at 350 for 1 hour, take foil off cook another 15 mins.
