MARGARITA'S TUNA CAKES

1       Can     Tuna, drained
3       Cups    Bread crumbs
2       Tbsp.  Lemon or lime juice
1       Tsp.    Cayenne pepper
1       Tbsp.  Mayonnaise
4       Tbsp.  Sweet pickle relish
-       -       Parsley, chopped
1       Med     Onion, chopped
2       Lg.     Eggs
2       Stalks  Celery, chopped fine


Mix ingredients until they hold together, but not too dry or
too mushy. If too dry add a little water by the Tablespoon 
until the desired consistency is achieved. If too moist add
more bread crumbs.

Fry until golden. Goes well with french fries and cocktail
sauce.
