Here are the other recipes Tee sent me a few days ago...not sure about the
fish heads, but the noodles sound great! I guess he's posted a few times
to soc.asia.malaysian or something like that with some of his recipes :)

THE FRIED MEE (NOODLES) HAS GARLIC!!!....fish heads even more...6 cloves!

    Malaysian common recipes : 

(1) Fish Head Curry
    ~~~~~~~~~~~~~~~

Ingredients :
1 fish head
1 bunch kesum leaves.
1 cup oil
1/2 cup tamarind pulp - mixed with 1 bowl of water and stranind.
100 gms shallots   \
6 cloves garlic     > ground together
2 cm piece turmeric/  
2 tomatoes
2 cm piece shrimp paste \
10 dried chillies        > ground together
2 stalks lemon grass    /  
salt to taste

Method :
* Heat oil in an earthen pot and fry all the ground ingredients for 10
  minutes.
* Pour the tamarind juice in.
* Add in the fish head and salt and bring to the boil. Simmer.
* Add in the tomatoes and kesum leaves. Bring to boil again and remove.

(2) Friend Mee ( Mee ---> Noodles )

Ingredients :
350 gms fresh yellow noodles
120 gms beansprouts, remove ends
2 pieces firm white bean cake, fried and sliced 
5 dried chillies   \
4 shallots          > grind together into a paste
2 pips garlic      /  
1 tbsp light soya sauce
1 tbsp dark soya sauce
120 gms mustard greens (sawi),cut into lengths 
200 gms prawns, shelled and deveined
1 red chilli   \ 
1 green chilli / sliced
2 potatoes,boiled and diced
1 hard boiled egg
1 big lime
salt and pepper to taste
4 tbsp oil

Method:

* Scald noodles and drain.
* Heat wok and add oil. When oil is hot, add chilli paste and fry until 
  fragrant.
* Add prawns. Continue to fry until prawns are almost cooked. Add bean 
  sprouts and mustard greens. Do not over cook vegetables.
* Add noodles. Mix well. Add soya sauces and adjust seasoning.
* Add bean cake slices and potatoes.
  Serve garnished with slices of hard boiled egg, red and green chilli 
  and lime.


(3) Fried rice
    ~~~~~~~~~~
Ingredients :
1 medium-sized onion - chopped
1 stalk fresh coriander leaves - shredded
1/2 cup precooked green peas
2 tbsps boiled shrimps
2 red chillies - sliced
2 eggs
400 gms cold, cooked rice
salt and pepper to taste

Method :
* Heat the oil and fry the onions until light brown.
* Add the rice and fry for a couple of minutes, stirring continuously.
* Push the rice aside and crack the eggs into the centre of the wok.
* Stir well for 3 minutes.
* Add the prawns, peas and salt and pepper, and remove from heat.
* Serve garnished with coriander leaves and red chillies.

# Wok - a kind of pan. have you ever go to the chinese restaurent? the cook
        like to use WOK to cook food. it isn't flat and no cover. You can 
        ask someone whom know chinese food.

# I am afraid that some ingredient is rare to find out in USA. You can go to
  the special shop which is for indian food or south east asia food, ask them
  to help you.
