                          Roasted Greek Potatoes

   1      pound         new potatoes -- scrubbed
     1/4  cup           lemon juice
   2      teaspoons     olive oil
   1      clove         garlic -- minced
   1      teaspoon      oregano
     1/4  teaspoon      salt
                        pepper -- to taste
     1/2  cup           water

Preheat oven to 400 degrees and line a 8 X 8 inch pan with aluminum foil.
Cut potatoes in half. In a small jar combine oil, garlic, oregano and
lemon juice. Shake well to blend.
Place potatoes in the prepared pan and pour dressing over. Sprinkle with
salt and pepper. Pour in water. Bake for 45 minutes to 1 hour, or until
potatoes are tender, browned and have absorbed the liquid.
