My mother often makes this dish for get-togethers.  Without fail, people ask
her for the recipe.  She shares it and so will I.


Curried Rice Salad

1 1/2 cups instant rice
1 1/2 cups water

Cook rice.

1 1/2 cups celery
1/2 cup green onions, chopped
1/3 cup oil
1 1/2 tsp white vinegar
1 1/2 tsp curry (or more to taste)
1/2 tsp salt
2 tsp celery seeds
2 tbsp soy sauce

Mix ingredients together and pour over rice.  Toss.
