Cowboy Beans We have these beans often at home but always when we go camping. 3 slices bacon 1/2 cup chopped onion 1 can pork and beans 4 tablespoons ketchup salt to taste Cook bacon until crisp. Remove and drain. Add onion to bacon drippings and cook until they start to get tender. Add remaining ingredients. Cook for about 10-15 minutes, or until the ketchup is reduced and starts to thicken. Stir in crumbled bacon and serve. Variation: For a more complete meal, brown a pound of ground beef instead of bacon. Serve with potatoes cooked in the ashes and corn on the cob. Great treat!
