CHICKEN NICOISE

2 boneless chicken breasts
1 tsp chilli paste
olive oil for cooking
3 medium red skin potatoes, cooked and cubed
250g green beans, slightly cooked and sliced
12 red and yellow cherry tomatoes (or all red)
1 cucumber, peeled and diced
2 green capsicums, cored and de-seeded, and diced
4 spring onions, thinly sliced
3 hard-boiled eggs, sliced
2 Tbs small black olives (opt)
Mix salad leaves, torn

DRESSING
2 Tbs balsamic wine vinegar
2 Tbs extra virgin olive oil
1 tsp Dijon mustard
Salt and freshly ground black pepper

Heat a little olive oil in a heavy based pan.  Add dice chicken and
chilli paste.  Quickly saute over high heat.  Whisk or shake the
dressing ingredients together.  Mix all salad ingredients together
and arrange on serving plates.  Pour over salad dressing and enjoy.
