Hi!

I'm sending you a recipe that my family enjoys.
**

PLANTATION RED BEANS AND RICE WITH SMOKED SAUSAGE

1 lb. dried red beans
2 qt. water
1 large onion (chopped)
4 or 5 scallions (to you Northern folks, green onions)
2 cloves garlic (chopped)
1/2 cup chopped parsley (fresh)
1 small bell pepper (chopped)
1 stalk celery (chopped)
2 lbs. smoked sausage
Salt
Red pepper

Boil beans until tender enough to smash easily with a fork and the liquid
is cloudy and creamy.

Cook sausage in black frying pan on med.-high with one tablespoon of oil.
Then drain oil off. Cut into slices about 1/2 inch thick and add to beans
when cooked.

In a frying pan cook onions, garlic and whites of scallions until
translucent and tender. Add this to cooked beans along with parsley,
shallot greens, bellpepper, and celery.

Salt and pepper to taste.

Serve hot over rice and enjoy!

Everyone will enjoy this enjoy this recipe, we have for years.
I hope you enjoy this little taste of Cajun Plantation Country in South
Louisiana.
