Diabetic, Low-Fat Black Bean Relish (high fiber)

1 15 oz. can black beans, rinsed and drained
1 medium tomato, finely chopped
1/2 cup chopped red pepper
1/4 cup chopped red onion
4 oz. can or jar, chopped green chilies
2 Tbsp vinegar
1 tsp. balsamic vinegar
1/4 tsp. salt

Combine all ingredients in a medium bowl; stir to blend. Cover and
refrigerate until chilled, about 1 hour.
Makes 8 servings.
Calories   62   Fat   1 g   Fiber   6 g.
NOTE: Great with grilled meats or grilled fish.
Exhanges   1 bread/starch   1/2 veggie.
