I "invented" this in a sort of panic, when we had company one
afternoon.  No one liked poached eggs, but were omelet lovers.

3 egg
butter
a handful of cubed ham pieces -  approx  1/4 x 1/4 x 1/4 inches
Hollandaise sauce
2 slices of tomato  

Whisk the eggs.  Melt butter in an omlet pan. When the omelet is cooked but 
still open in the pan,  open,  put on a handful of cubed ham pieces (I used 
homemade Sunday Ham pregrilled cubed approx 1/4 x 1/4 x 1/4 inches)  Covered 
this with some Hollandaise sauce.  Put the omelet onto a plate, and fold it.  
Covered the omelet with more Hollandaise sauce.  On top of put 2 slices of 
tomato.   

It tasted wonderful, and I thought I would share it with you.
