Followup-To: poster Lines: 32 ---------- Recipe via Meal-Master (tm) v8.01 Title: Baked Tomatoes with Orzo and Olives Categories: Vegetables, Vegetarian, Appetizers Yield: 8 servings 4 lg Tomatoes, halved, hollowed 3 c Cooked orzo 1/4 c Olives chopped 1 t Garlic, finely minced 3 T Basil, or parsley chopped 3 t Pine nuts toasted 1 T Olive oil 1/4 c Parmesan cheese Preheat oven to 350 degrees or grill Halve and hollow tomatoes, place in a baking dish. Mix the rest of the ingredients except the cheese together in a small bowl and season with salt and pepper to taste. Carefully stuff the tomatoes and sprinkle with cheese.
