This recipe makes an easy snack or appetizer.

Arabian Potatoes

1 lb   small, round red potatoes or regular potatoes diced
       in 1" cubes.
4      limes
1      small onion, finely chopped
1 Tbsp. Olive oil
1 C.   chopped parsley
Salt, to taste

Cook the potatoes unpeeled.

Heat the oil and fry the onion. Add the potatoes and parsley, stir
and cook for 3 min covered. Add the lime juice, stir and cook
covered until dry.
