Renovation of the Simpson Dining Hall involved a complete redesign of the facility to increase energy efficiency, enhance the dining experience and create a new internal entryway connecting Mason, Simpson and Hamilton Halls. The upgrades to the dining space provided new "food station neighborhoods" in the servery areas, additional restrooms, mechanical, electrical and plumbing upgrades. All food service equipment was replaced and a Kosher food service and preparation area was incorporated . Loading dock and fire protection upgrades were also included in the scope of work.
In accordance with the University of Vermont's "Environmental Design in New and Renovated Buildings" policy, the Simpson Dining Hall Renovation is being designed, at minimum, to meet LEED Silver Level criteria.
