Vermont school food service operations vary considerably in size and sophistication. Production methods also vary from conventional to assembly service where products are purchased already prepared. The educational level of staff varies greatly and turnover is high among employees. UVM Extension is making efforts to help prevent or manage chronic diseases, and many of these can be prevented through better lifestyle choices. Positive lifestyle changes result in people feel better about themselves, their families and their communities.
